China has very diverse diet habits which can be separated into three main categories of food: southern, northern, and mid-western.
In fact, the majority population who live in Chinatown is from the south part of China: Canton. Dim-sum, which is the typical dish such as shumai, spring roll, rice noodle roll, etc. has the most restaurants in Chinatown. This is possibly because Cantonese people love to chat and eat at the same time, so they will continue eating small dishes of different kinds of food and talking about life until they are full. Also, bakeries are popular too because people buy buns when they are hungry, and it is time is not for a real meal yet.
The second major type of food is northern. People who live in the north have traditional eating noodles and baozi. This type of food is usually a little spicy because the weather is cool in the north, and folks want to eat something can make them feel warm. There is the similarity between north and south: they both have a bowl of rice frequently for meals, which is also a stereotype of how others view Asians.
The last but not least style is the mid-western food. The typical dishes might be hot-pot from Sichuan and Pita Bread from Xi’an. These cities are the major one in mid-west China, and the cuisine adopts spicy and more stuffing inside.
